Tutu de feijăo (Beans with manioc flour)

Ingredients:
2 cups of cooked beans
2 tablespoons of oil
1 small chopped onion
1 clove of crushed garlic
1-2 cup(s) of water
1 bay leaf
parsley and spring onion (optional)
1 teaspoon of salt
1 dash of ground black pepper
4-6 tablespoons of toasted manioc flour to thicken
Preparation:
1. Sauté the onion and the garlic in hot oil.
2. Add the beans, the water, all the seasonings and stir well.
3. Bring it to a boil under medium heat until the liquid is thick.
4. Remove the bay leaf and puree the beans with a hand blender.
5. Add the manioc flour little by little, stirring constantly.
6. Stop adding manioc flour when the mixture is like a puree.
7. Put the mashed beans in a bowl and serve it.
