Ingredients: |

tablespoon of oil |

1 small
chopped onion |
|
1 clove of
crushed garlic |
|
2-3 potatoes cut into
cubes |
|
1 carrot cut into cubes |
|
1 green beans cut into pieces |
|
2
chopped tomatoes (peeled/seedless) |
|
chopped parsley and
spring onion |
|
2 liters of boiling water |
|
1 chicken/meat
bouillon cube (optional) |
|
salt and black pepper
to taste |

Preparation: |

1.
Heat a tablespoon of oil in a saucepan.
|

2.
Add the onion, the garlic
and stir-fry
until golden brown. |
|
3.
Add the
vegetables,
the parsley, the spring onion
and mix well. |
|
4.
Add the water,
chicken/meat bouillon cube,
the salt, the pepper and let it cook
under medium heat for 30-40
ninutos.

5. Put the soup
in a
bowl and serve
it. |
