Sopa de legumes (Vegetable soup)

Ingredients:
1 tablespoon of oil
1 small chopped onion
1 clove of crushed garlic
2-3 potatoes cut into cubes
1 carrot cut into cubes
1 green beans cut into pieces
2 chopped tomatoes (peeled/seedless)
chopped parsley and spring onion
2 liters of boiling water
1 chicken/meat bouillon cube (optional)
salt and black pepper to taste
Preparation:
1. Heat a tablespoon of oil in a saucepan.
2. Add the onion, the garlic and stir-fry until golden brown.
3. Add the vegetables, the parsley, the spring onion and mix well.
4. Add the water, chicken/meat bouillon cube, the salt, the pepper and let it cook under medium heat for 30-40 ninutos.
5. Put the soup in a bowl and serve it.
